Mmm...Pineapple Cake

Tammi over at Simple Country Cookin' was kind enough to share this recipe for yummy pineapple goo cake...just the title makes me want to drool....LOL I believe the recipe is from Paula Deen--so you know it has to be heavenly. My sweet husband said it was the best cake he has ever had. :)

PINEAPPLE GOO CAKE

2 c. all-purpose flour
2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/8 tsp. salt
2 large eggs
2 (8 oz.) crushed pineapple, undrained
1 tsp. vanilla
Coconut Icing Recipe (below)
1 c. chopped pecans
1 c. sweetened flaked coconut

Preheat oven to 350. Lightly grease and flour a 13x9x2 pan.In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Add eggs, pineapple and vanilla. Beat at medium speed until combined. Pour batter into prepared pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.Using the end of a wooden spoon, poke 1/2 in. deep holes in top of cake at 1-in. intervals. Pour coconut icing over hot cake. Sprinkle with chopped pecans and coconut. Cut into squares to serve. Store in refrigerator.

COCONUT ICING Yield: 1 1/2 cups
1 c. butter
5 oz. cream
1 1/2 c. sugar
1 tsp. vanilla
In a medium saucepan, combine butter, cream and sugar. Bring to a boil over medium heat; boil for 2 minutes, stirring constantly. Remove from heat; stir in vanilla.

I had to quickly take a picture because it was gone in no time. Yum-O!!

Glad you liked the cake. Like I said before, my husband is not much on sweets but he loved this cake. As a matter of fact he has requested it again for this weekend.
